Recently, I posted a recipe for Chocolate Protein Bites that were a huge hit!  I made both the chocolate bites and these coconut cranberry bites for an event that I did, and people loved them both!

Cranberry Coconut Protein Bites are one of those snacks you’ll keep coming back to. Why? They’re quick, easy, and packed with good stuff. Think tart cranberries, tropical coconut, and a boost of protein—all rolled into one bite-sized treat. Perfect for busy mornings, post-workout fuel, or even a sweet tooth fix. Plus, they’re no-bake and super versatile.

We just keep them in the fridge and they are great to grab and go!

The recipe is super easy and you can add in pretty much anything you like and just add more honey or peanut/nut butter until you get the right consistency and they aren’t too dry!

  • ⅓ cup vegan vanilla protein powder
  • ⅓ cup unsweetened shredded coconut
  • ⅓ cup dried cranberries (chop them if they’re large)
  • 2 tablespoons maple syrup

How to Make Them

  1. Mix It Up
    Grab a big mixing bowl. Toss in the almond butter, ground flaxseed, protein powder, shredded coconut, dried cranberries, and maple syrup. Start stirring with a wooden spoon—it’ll look crumbly at first. Pro Tip: If your almond butter is too thick, microwave it for 10 seconds to loosen it up.
  2. Knead the Dough
    Once it starts to come together, ditch the spoon and use your hands. Knead it gently until everything’s evenly mixed and the dough holds its shape when pressed. Visual Cue: The dough should feel slightly sticky but firm enough to roll into balls.
  3. Roll Into Bites

  4. Chill and Store
