Taco Salad with Homemade Sweet Potato Chips

My hubby and I are doing another Whole30, so this was dinner a couple of nights ago!

It was super yummy and very easy to make!  You just need to allow enough time for the sweet potato chips to bake!


  • Sweet Potato (I used 3 medium potatoes for 2 of us)
  • Coconut Oil
  • Salt and Pepper
  • Ground Beef
  • Onion
  • Taco Seasoning (Homemade is best!)
  • Toppings (lettuce, tomato, salsa, guacamole, cheese, sour cream, etc.)


  1. Preheat the oven to 275. Slice sweet potatoes as thin as possible using a knife, food processor, mandoline or flat blade on a spiralizer. Toss with a couple of spoonfuls of melted coconut oil, salt and pepper. Spread on 1-2 cookie sheets and bake for 1½-2 hours, stirring every 20-30 minutes, until crispy. I also turned the broiler on for about 8 minutes at the end.
  2. Brown ground beef and onion, drain grease and add taco seasoning. Top with desired toppings!
