Pancit Canton Recipe

Pancit Canton or any other type of noodle dish is almost always present in a Filipino birthday celebration because it is said to represent long life and good health. It is very important though that you do not cut the noodles to avoid counteracting the luck. Now I am not very superstitious but you also won’t find me cutting my noodles.

Easy to cook and always a hit in our house.

Let’s get cooking!

What you will need are the following:

  • 500 grams Pancit canton (dry noodles)
  • 1/4 kilo Duck meat (thinly sliced)
  • 10 pieces of fish balls (sliced)
  • 1 cup sliced chorizo (optional)
  • 10 pieces medium-sized shrimps, shelled and deveined (optional)
  • a handful of snow peas
  • a handful of chopped cabbage
  • 1 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1 cup onion, (chopped)
  • 2 small red bell pepper (sliced)
  • 1 tsp ground black pepper
  • 1 tbsp salt
  • 4 cups chicken stock
  • 4 tbsp soy sauce
  • 2 tbsp cooking oil
  • 2 tbsp oyster sauce

We skipped the chorizo because my husband doesn’t like them on his Pancit and the shrimps too because he is allergic to crustaceans (sad life).

What you need to do are the following:

  • Heat oil and saute your garlic and onion in a pan
  • Add Duck meat, cook until brown
  • add soy sauce
  • add chorizo, oyster sauce and chicken stock and simmer for 15-20 minutes
  • add the fish balls and shrimp and cook for about 2-3 minutes
  • add salt and pepper to taste
  • add the canton (noodles) and cook until all the liquid has been absorbed by the noodles
  • add carrots and snow peas and cook for about 2-3 minutes more
  • serve hot and always with a smile because you are the bearer of good luck.
