Ingredients

Instructions

  1. Boil penne in salted water until al dente. Drain and set aside. Reserve 1/2 cup of pasta water.

  1. Dip chicken pieces in beaten egg, then coat with breadcrumbs.

  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook chicken in batches until golden brown (about 5 minutes per batch). Set aside.

  1. In the same skillet, heat remaining olive oil. Add grape tomatoes and garlic; cook until softened (about 2 minutes).

  2. Stir in heavy cream, oregano, salt, and pepper. Simmer briefly until slightly thickened.

  1. Toss cooked pasta and chicken with the sauce in a large bowl. Add half the mozzarella, all the Parmesan, and some fresh basil. Mix well.

  1. Transfer mixture to a greased 9×13 baking dish. Sprinkle remaining mozzarella on top. Broil for 2–4 minutes until bubbly and golden.
