Easy Macaroni Salad Recipe
I was really craving for macaroni salad Saturday morning so I ran to the grocery store right across where we live (a perk of living right smack in the middle of everything is you can easily go out and buy ingredients which are not available in your pantry) and bought the ingredients. By 5 pm. I had chilled macaroni salad sitting in the fridge.
My grandma used to make the yummiest and the creamiest macaroni salad within a 5000-mile radius when she was still around but her recipe required a lot of ingredients. Now, weekends are lazy days for me and even if I was craving for her macaroni salad, I was not willing to slave myself in the kitchen that day, so I came up with my own Easy Macaroni Salad Recipe.
My grandma’s recipe includes cooked shredded chicken in the ingredients but there was no way I was gonna shred anything that day. Solution? Cooked ham.
Also, her recipe includes cooked potatoes, boiled eggs and pineapples. I hope she doesn’t rise from the grave to scold me but I omitted those too.
This recipe is now the less expensive and easier version of Teresita’s Macaroni Salad.

The first thing to do is to cook the pasta according to the instructions. Al dente please!
Blanch your diced carrots but you can totally add them raw too. I just like them softer and sweeter so I gave them a hot bath.
Chop your onions, dice the cheese, dice the cooked ham and mix those with the pasta, raisins and pickle relish in a large bowl.
Add the mayo and all-purpose cream.
Pop it in the fridge to chill for 2 hours and you’re done!

Easy and tasted just as good as grandma’s!
Easy Macaroni Salad Recipe
Ingredients
- 400 grams Elbow Macaroni Pasta
- 1 1/2 cup Mayonnaise
- 250 ml All Purpose Cream
- 1 cup Diced Cheese
- 1 cup Raisins
- 1/2 cup Chopped White Onions
- 1 cup Pickle Relish (drained)
- 1 cup Blanched and Diced Carrots
- 1 cup Diced Cooked Ham
Instructions
- Cook elbow macaroni according to instructions, rinse in cold water then drain.
- Mix all ingredients in a bowl.
- Chill for 2 hours before serving.
